Add salt, pepper and cajun seasonings to taste. Cover and simmer for 1 to 1.5 hours (or longer) until desired tenderness is achieved. For a creamier consistency, when beans are soft, crush some of the beans against the side of the pot with a large spoon. Add water while cooking if necessary. Serves 6 to 8.
